A study of 461,682 people, followed for nearly two decades, has just complicated the simplest story we tell about food. Published this October in PLOS Medicine and drawn from the US National Institutes of Health's long-running AARP Diet and Health Study, the research found that total ultra-processed food intake, on its own, was not linked to colorectal cancer risk. The more telling finding sat underneath that headline: when researchers modelled replacing just 10% of ultra-processed foods with minimally processed, whole foods, the incidence of colorectal cancer dropped. Not all processed foods behaved the same way, either. Items built around refined meats tracked with higher risk; whole grains, fibre and dairy tracked with lower risk.
It is a useful corrective. The conversation around "ultra-processed food" has become a blunt instrument, when the evidence keeps pointing somewhere more specific: it is not processing itself that matters most, but what is actually in the food, and how far it sits from its original form.
The case that keeps holding up
Extra virgin olive oil has spent two decades being studied against exactly this question, and it keeps answering the same way. The British Heart Foundation points to the Mediterranean diet, built around olive oil as its primary fat, as one of the best-evidenced patterns for heart health available. In Europe, the regulatory bar is higher still: olive oil polyphenols are one of the few compounds to hold an EFSA-approved health claim, recognised for helping protect blood lipids from oxidative stress. That claim exists because the European Food Safety Authority reviewed the clinical evidence and found it sufficient — a conservative body, setting a conservative threshold, and olive oil cleared it.
The distinction between extra virgin and refined olive oil turns out to matter here too. Harvard Health notes that the cold extraction process preserves the polyphenols largely stripped out of refined oils, and polyphenols are doing real work: supporting the heart, moderating inflammation, and, in emerging research, linked to brain and gut health as well. Fresh pressing isn't a flavour choice. It's the reason the oil still contains what makes it useful in the first place.
A ritual, not a rule
This is where the new research is quietly reassuring. It suggests that the path to better long-term health isn't a dramatic overhaul or a list of foods to fear. It's proportion. A small, daily shift toward whole, minimally processed ingredients compounds over years in a way no single meal ever could.
That's the premise Oliiv was built on. A spoonful of fresh-pressed olive oil, taken at the same point each morning, is a small action — but it is a whole-food one, rich in exactly the compounds the research keeps circling back to. It asks nothing dramatic of the day. It simply sits there, consistently, doing its quiet work.
Provenance is what makes that spoonful mean anything. Oliiv is harvest-dated, pressed within hours of picking from regeneratively farmed, single-estate groves, and bottled before oxidation has a chance to dull its polyphenol content. The difference between that and a bottle that has sat on a supermarket shelf for a year is the difference the EFSA claim and the Harvard Health note are both describing: freshness is not a marketing word, it's the variable the science depends on.
-
Polyphenols — the antioxidant compounds concentrated in early-harvest, cold-pressed oil, linked to heart and brain health
-
Oleic acid — the monounsaturated fat that makes olive oil the stable, evidence-backed centre of the Mediterranean pattern
-
Harvest date — the single clearest indicator of how much of that benefit is still intact in the bottle
None of this is a case against whole grains, or fibre, or any of the other foods the PLOS Medicine study found protective. It's a case for building a day around real food, in small, repeatable ways — and for choosing, deliberately, the version of each ingredient that still resembles where it came from.
The research will keep refining itself, as research does. What won't change is the logic underneath it: freshness, provenance and consistency, stacked quietly, one spoonful at a time.
