A new wave of food writing is making an unfashionable case this autumn: that your tongue has been trained to prefer the wrong olive oil. A widely syndicated piece published this week — "Taste buds are wrong; bitter olive oil is better" — argues that shoppers routinely pass over the most beneficial bottles on the shelf because they taste sharp, bitter, or peppery at the back of the throat. Mild and sweet has quietly become the supermarket default. It is also, more often than not, a sign of an oil that has already given up its best qualities.
The taste you were taught to avoid
Bitterness and that distinctive peppery catch in the throat are not flaws in extra virgin olive oil. They are polyphenols — the plant compounds responsible for most of the oil's wellbeing credentials, and the reason a truly fresh oil tastes alive rather than flat. As those compounds fade, so does the bite. An oil that tastes like nothing in particular is usually an oil that has already lost the thing worth paying for.
This is not a fringe opinion. The European Food Safety Authority has formally assessed the evidence for olive oil polyphenols and their role in protecting LDL particles from oxidative damage, among other claims — the scientific basis for the EU's authorised health claim that olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. That protection exists because of the very compounds responsible for the bitterness. Sweetness and shelf life, it turns out, are closely related, and not in the way the supermarket aisle suggests.
Why the science holds up
The case for olive oil as a daily habit, not an occasional drizzle, has been building for some time. Researchers at the Harvard T.H. Chan School of Public Health followed more than 92,000 American adults for 28 years and found that those consuming at least half a tablespoon of olive oil daily had a 28% lower risk of dementia-related death, regardless of their overall diet quality or genetic risk. In the UK, the British Heart Foundation points to the Mediterranean pattern — olive oil used in place of butter and other saturated fats — as a diet that can meaningfully lower the risk of a repeat heart attack, while being clear that one swap alone will not do the work of a whole pattern of eating.
What ties these findings together is not olive oil in general, but the quality of it. Heat, light, oxygen, and time all strip polyphenols away. A refined or long-stored oil may carry the same calories and the same marketing, but very little of the compound actually responsible for the research headlines above.
A ritual, not a seasoning
This is the quiet distinction at the centre of how we think about Oliiv. Not as a cooking ingredient reached for occasionally, but as a small, consistent daily ritual — closer in spirit to fresh-pressed fruit juice than to a bottle that sits in the cupboard for a year. A spoonful each morning, taken on its own or over something simple, is less about flavour theatre and more about giving the body a dependable, polyphenol-rich dose of something good.
That is only honest if the oil itself holds up to scrutiny. Every Oliiv bottle is traceable to a single estate and a single harvest date, cold-pressed within hours of picking, from olive varieties chosen for their natural polyphenol content rather than for yield. We would rather an oil taste vivid, green, and a little sharp at the back of the throat than smooth and forgettable. That bite is the point.

None of this requires a dramatic change to how anyone eats. It asks for one ordinary choice, repeated daily: reaching for an oil that tastes like something, and trusting that the sharpness is doing quiet work in the background. Freshness is everything. The harvest date tells the real story, and the taste, it turns out, was telling it all along.
