Harvest season has begun. In Greece, growers started picking the 2026/27 crop this week, with early estimates putting the national yield somewhere between 280,000 and 330,000 tonnes — and farm-gate prices down more than half from last year's peak, according to reporting from Greek City Times. Cheaper oil is already changing habits: domestic sales rose around 20% by volume this past year as households traded back up from seed oils.
It's a useful moment to ask a quieter question. If two bottles of "extra virgin olive oil" can sit side by side on a shelf — one costing a third of the other — what, exactly, is the price actually paying for?
The honest answer is rarely the olives themselves. It's freshness. It's how quickly the fruit moved from tree to press, how it was stored, and how long it has sat in a tank, a tanker, or a warehouse before it reached a bottle. Olive oil is a fruit juice, not a shelf-stable pantry staple — and like any fruit juice, it begins losing its best qualities the moment it's pressed.
Freshness is the real ingredient
This is where the science gets specific rather than vague. Extra virgin olive oil's benefits are largely carried by its polyphenols — the plant compounds responsible for that peppery, catch-in-the-throat finish on a good bottle. They're also unstable. Heat, oxygen, light, and time all degrade them, which means an oil's polyphenol content can fall dramatically between an early harvest, cold-pressed bottling and a late-season, long-stored one carrying the same label.
The European Food Safety Authority doesn't take an abstract view of this. Its scientific opinion on olive oil polyphenols concluded that phenolic compounds in olive oil contribute to protecting blood lipids from oxidative stress, at a defined daily intake of hydroxytyrosol and its derivatives — one of the few olive oil health claims permitted in EU law, and one that hinges on the oil actually containing enough of the compound in question. A tired, over-processed oil simply doesn't qualify.
The longer-run evidence tells a similar story about what's at stake. A 28-year US cohort study of more than 92,000 adults, published in JAMA Network Open, found that people consuming at least 7 grams of olive oil daily — roughly a spoonful — had a 28% lower risk of dementia-related death than those who rarely used it, independent of their broader diet quality. And in the UK, the British Heart Foundation continues to point to the Mediterranean diet — built around olive oil as its primary fat — as one of the most consistently evidenced patterns for long-term heart health.
None of this is a claim that any one bottle will change an outcome. It's a reminder that the research keeps pointing to the same variable: consistent, meaningful daily intake of oil that still has something in it worth consuming.
The ritual, not the reduction
This is why we've always resisted treating olive oil as a finishing touch — something drizzled on at the end, when there's some left in the cupboard. A spoonful each morning, on its own or stirred through something simple, is a more honest way to use it: consistent, unheated, and easy to keep up.
It's a small habit rather than a health regimen. That's rather the point. Longevity research increasingly favours what can be sustained over years, not what looks impressive for a fortnight — and a daily ritual, kept simple, tends to outlast a supplement stack.
Rooted in provenance
This is also why we've built Oliiv around a harvest date, not a best-before date. Every bottle carries the date its olives were pressed, sourced from single-estate groves farmed regeneratively, and it moves from tree to bottle in a matter of hours rather than months. We'd rather a customer ask "when was this pressed?" than "how much did this cost?" — because as this season's price swings show, cost alone tells you very little about what's actually in the bottle.
As harvest gets underway across Greece, Spain, and Italy this autumn, it's worth treating the season as a small annual checkpoint: a moment to look again at the date on the label, not just the price on the shelf.
