Harvard researchers spent two decades following more than 121,000 people to answer a question most of us settle at the breakfast table without a second thought: butter, or olive oil? The study, published this year by Harvard T.H. Chan School of Public Health and led by Dr Marta Guasch-Ferré and Dr Frank Hu, drew on the Nurses' Health Study, its follow-up cohort, and the Health Professionals Follow-up Study — three of the longest-running nutrition datasets in the world. The finding was quietly decisive. Replacing a serving of butter with olive oil was linked to less long-term weight gain than any other fat swap researchers tested.
It is the kind of result that rewards patience rather than headlines. No single meal changed. No dramatic before-and-after. Just a small, consistent choice, tracked across two decades, that separated itself from the noise.
What the research actually found
Each additional half-tablespoon of olive oil consumed daily was associated with modestly less weight gain over time. But the more telling number came from substitution: swapping butter specifically for olive oil showed the strongest association with reduced weight gain among all the comparisons made, more pronounced still in people who began the study with a higher body weight.
A separate study from the University of Bari in Italy, published in Frontiers in Nutrition, looked at the same question from a different angle — not weight over decades, but the body in the present. Among more than 16,000 adults, those who consumed extra virgin olive oil regularly (roughly six or more days a week) had a waist circumference averaging 89.1cm, compared with 99.4cm among sporadic consumers. Irregular EVOO intake was linked to more than five times the odds of abdominal obesity. The researchers noted the effect held even after accounting for overall diet quality — this was not simply a proxy for eating well generally, but a signal specific to the oil itself.
In the UK, the British Heart Foundation's guidance lands in a similar place. Its dietitians point to the same principle: the benefit of olive oil comes largely from what it replaces. Swapping saturated fats — butter, ghee, coconut oil — for olive oil's monounsaturated fat is, in the BHF's words, linked to lower LDL cholesterol while preserving HDL, and to a modest reduction in heart disease risk. The message across three separate bodies of research, from three different continents' worth of data, is unusually aligned: it is not about adding olive oil to a diet that stays otherwise unchanged. It is about what leaves the plate to make room for it.
Why the ritual matters more than the moment
This is where the science and the daily habit meet. A spoonful of good olive oil each morning is not a supplement, and it is not a trend to try for a fortnight. It behaves more like the studies that measure it — a small, repeated choice whose value only becomes visible with time.
What separates one bottle of olive oil from another is largely invisible until you understand what you are looking for:

Polyphenols — the antioxidant compounds concentrated in early-harvest, cold-pressed oil, linked to anti-inflammatory activity and supportive of heart and brain health

Harvest date — polyphenol content begins to decline from the moment olives are pressed, which is why freshness, not just origin, determines what is actually in the bottle
None of this is a reason to expect any single spoonful to change very much. It is a reason to treat the ritual itself — done daily, without fuss — as the thing worth getting right.
Rooted in provenance
This is also why Oliiv exists in the form it does. Each bottle carries a harvest date, not a best-before date treated as an afterthought, because freshness is the difference between an oil that behaves like the ones in these studies and one that has spent a year losing potency on a supermarket shelf. Begin the day with one simple ritual: a spoonful of fresh-pressed olive oil, taken on its own or stirred through something as plain as porridge or toast. It asks very little. The research above suggests it may be worth doing anyway — consistently, and for longer than a fortnight.
